We had the good fortune of connecting with Anthony Moses-cossio and we’ve shared our conversation below.
Hi Anthony, what led you to pursuing a creative path professionally?
Ever since I first saw someone smiling and enjoying something I cooked for them, I knew I wanted to become a chef. The feeling of knowing that people enjoy my food—something I created—is a feeling like no other. To be able to create and provide experiences that guests will enjoy, while allowing them to create their own memories is my life purpose— and all of this can happen at the dining table, where one is surrounded by amazing food and drinks. The saying is true, when you love what you do, you never work a day in your life. Being able to cook for guests everyday and see the joy it brings to them is what fulfills me.
Let’s talk shop? Tell us more about your career, what can you share with our community?
Being half Peruvian and half Colombian, there’s a lot of bold flavors in both of those countries that I grew up eating. Those flavors have definitely influenced my food and cooking.
I’m most proud of all the hard work I’ve done. No matter what career you’re in, you never get to where you want to go without hard work and dedication. Everyone’s journey is different but I think we can all agree that no journey is ever easy. Nothing in life worthwhile comes easy. From working 16+ hours, late nights, missing family events, etc.. I’ve had to make sacrifices to get to where I am today.
I’m excited to continue to work hard towards to my dream and goal of opening my own restaurant in the coming years to be able to show the world more of my cooking.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my best friend was coming to visit, we definitely have to go to Miami! My idea of fun is going out eating good food, having good drinks and being surrounded by good friends and company. We’d probably start our night off at Vice Versa for some Negroni’s and snacks by Valentino Longo and Justin Flit. Then head to Maty’s for some amazing Peruvian food by Valerie and Nando Chang. Then head to the champagne bar at the four seasons hotel at surf club, for some night caps.
Who else deserves some credit and recognition?
There are so many people I have to thank, so many people that have helped me along my journey and my career. First and foremost I’d like to thank my parents, for always giving me the opportunity to follow my dreams and showing me that when you work hard, you goals can become a reality.
I’d like to thank Brad Kilgore. My time spent at Alter working for Brad was one of my best of my career. He was the first chef that really pushed me and made me fall in love with cooking and food at a whole new level. He was such a great mentor to me and I’m forever grateful for being given the chance to learn from him.
I’d also like to thank not only one of the best chefs I know but also one of the greatest people I know, Pushkar Marathe. From working for him at Ghee in Miami, to Palm Beach and opening multiple restaurants alongside him. He’s been such an amazing mentor and friend. One of the most genuine individuals you’ll ever meet.
Lastly I’d like to thank my wife Allie, for always being my rock and for supporting and constantly pushing me to be better.
