We had the good fortune of connecting with Mirjam Lavabre and we’ve shared our conversation below.

Hi Mirjam, what matters most to you?
Values & certain principles are for me a key to happy living. This applies with my familly, friends, my colleagues and in my business. Values give a foundation for life: values is about caring and loving in life – it gives a balance to your everyday life.

I am convincend that if you live with values your life will be happier or at least more positive. And what more do you want in life apart from being healthy ? Happiness & love !

There are many values that I live by, and especially try to make my 21 year old son take in. This, so that his path in life will be easier. Values to me are equal to love. One of the values I try to go by is to enjoy as much as I can every little moment in life. Be it a sunset, be it a moment with friends and anything that brings you joy or makes you feel happiness. Value it, cherish it; nothing is a given.

Principles can go a long way. One of my major principles is “you can not only take; you must give” . You can not always take in life: give the same way you receive depending on where you stand in life at that moment. But what matters is that you give what you can at that moment.

Another one I use in my business as much as I can “do not postpone until tomorrow what you can do today”. I really try to instantly do what needs to be done. It goes back to a question of values: if you don’t postpone and do it the same day your life is going to be easier.

Values and principles are a foundation to a happy life.


Alright, so for those in our community who might not be familiar with your business, can you tell us more?
I just launched a business that came together during Covid by being with my friends and thinking about one of our traditional french pastries “Galette des Rois” (kings cake). This traditional pastry is usually only sold in France during the month of January, and it’s only one flavor. My idea was to make it the entire year with many different flavors. Instead of having a kings cake; have the king’s daughter create her own flavors and cakes –  “Princess Galette” was born. I had so much fun trying out all the flavors not only tradional flavors like lemon or apple, but trying out ginger, spirulina, dulce de leche and many more.

Discovering that you can pretty much make a Princess Galette in any flavor you wish. All the flavors are natural flavors and organic ingredients. A very important part in my business: natural & organic ingredients.

I’ve learned that creating is not always easy. It doesn’t come to me naturally. I am more of the “piecing together” type. My idea with Princess Galette is that whenever you want to share a moment with friends, a family gathering or just want to enjoy a dessert: you think of ordering or buying a Princes Galette in any flavor you’d enjoy.

Princess Galette has been created and brainstormed with friends that I love and that are impotant in my life.

This business for me is about sharing a harmonious moment.


If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
This for me is simple since family and friends are important to me: I always want to share with them places that I love or the places where I have spent some of the best moments in life.

Le Billboquet restaurant in NYC & in Sag Harbor.
The owner is a longtime and dear friend: Philippe Delgrange. If you want good food, a great atmosphere mixed with international people: Billboquet is the place to go. I feel at home at Bilbo. It is an institution in New York.
For a unique and beautuful designed store I go to Longchamp in Soho on 132 Spring Street. This store has been designed by

Thomas Heatherwick: it is incredibly designed and Longchamp is one of my favorite brands.

A super nice little restaurant in Nolita is Fiat Cafe: best pasta, super nice people, always have a smile on their face. The pasta is amazing: you just always feel welcome at Fiat Cafe.

The Honorable William Wall is Manhattan Yacht Club’s floating clubhouse in the harbor. It is open to the public where you can bring your own lunch or dinner, picnic, and watch the sunset. One of the most beautiful views of Downtown Manhattan; especially at sunset.

Magnolia Bakery. The one on Bleecker street. For me a must-go when I am downtown to go and grab one of the best cupcakes. They’re all so good.

Take a nice long walk on the highline starting on 34th street and walking all the way down to the Whitney Museum. They always have great exhibits, and finish with a drink at the BOOM BOOM room/bar at the Standard Hotel in the Meatpacking district. The bar is incredibly designed and it has a beautiful view all around.

In summer I would also take the ferry from the East side in Manhattan to Brooklyn, and have lunch at the Surf Bar. It has a “vacation” feel: beach vibe fish restaurant with an eclectic crowd. This, followed by a few hours on the beach in Brooklyn.


Who else deserves some credit and recognition?
I would dedicate this to all my friends who have supported, loved and helped me in my life. My son & my daughter, without them I would have never had the strength to do all I have done until now. My whole family who have taught me so much about values!
