We had the good fortune of connecting with Alejandra Aviles and we’ve shared our conversation below.

Hi Alejandra, we’d love to start by asking you about lessons learned. Is there a lesson you can share with us?
The most important lesson that my business has taught me is to be consistent in order to accomplish my goals successfully. I also think that is very important to overcome fear and uncertainty in order to grow your business. Every day is a new challenges so emotional intelligence is key to be able to take your business to the next level. Skills are important but believing in your ability to figure things out, it has been a game changer for me and my business.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
what makes me different from others artisan pastry chefs is the Latin essence that I add to each creation. Bake with passion and leave my own style in each cake. Also, It has not been easy to make my way in a market that has a lot of competition, but keeping traditional options in my menu and also joining the trend have allowed me to overcome the challenges.

One lesson that I’ve learned is to stay faithful to my traditions but at the same time listening to my costumers and keeping an open mind. Since I was a little girl I had a passion for baking. Now I can say that my passion is my business

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Colorado is a magnificent place, I love its landscapes. I would welcome my friend with a glass of tres leches filled with pastry cream and fruits. I’m sure she would love that.

I would take my friend skiing in the Breckenridge mountains. Then we can visit Isak Heartstone on the same mountain.
To finish that adventure, we will stop for dinner in Idaho Spring. There we can have a Colorado style pizza at Beau Jo’s.

We could also eat at any of theses locations: @ArepasCo, Barcelona Wine Bar, Kona Grill and El Five, my neighbor felix, season 52

There are many locations to sightsee here. Red Rocks Park, Garden Of the Gods, Broadmoor Seven Falls are good options. We could also play at the Central City casinos.

Georgetown Loop Railroad, Tiny town & railroad and Strawberry park natural hot springs are some options that she could also visit.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My parents and my daughter have been my source of inspiration. They have believed in my abilities, they have criticized me and encouraged me to continue improving. Also my best friend Claire Gerrish who encourage me to start a business venture when she told me that I really had a special ability to make great desserts.
