We had the good fortune of connecting with anthony Gruette and we’ve shared our conversation below.

Hi anthony, how do you think about risk?
Son of a former cook, my father knew the needs and the requirements that this job entails. it was a big risk for me following he’s leads knowing how difficult it will be. But today thanks to social medias cooking become an art for creative and talented chefs who want to share their arts. cooking for me is a passion and I think that in older to change old mentality you have to remain passionate, be curious and a hardworker. The key of success is to give yourself challenges and to improve your work behavior. Throughout my career I have been able to evaluate and mature until I have reached the position of a head chef. I did not hesitate at each stage of my evolution to change restaurants, to reconsider my decision and to step back to achieve my goal. I am still learning to renew myself and my passion. You just have to remained humble and sometimes not hesitate to venture into uncharted waters.

Alright, so let’s move onto what keeps you busy professionally?
Cooking today is considered an artisanal art, it’s more than that because it’s a passion. What I create must not only taste good but also be visually beautiful. Being passionate is always trying to renew yourself to discover new techniques, seek inspirations and learn how to evolve in your field.

What I am most proud of is having found the courage to go by myself to the United States in Miami, Florida. I was for the first time and it was a dream that comes true because I always wanted to visit Miami since I was a teenager. This experience made me gain in maturity and i learned to have another perspective of the world around me.

My curiosity and my motivation pushed me to leave my comfort zone, always seek to surpass myself and never consider anything as impossible. Nothing is easy at first, but the most important thing for me is that every thing that passionate me I do it for myself first. There were times when I doubted but I learned to work with it without being thrown off balance and staying focused on my goal.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
They are more than one person that inspires and encourages me to evolve and I am so grateful to have them in my life today, because it’s a gift to be surrounded by people who cares and understand your passion. But my dad is my main inspiration since my childhood. My dad was a former headchef, he had a very large experience in this field and today he helps me to take decision and correct me when I am on the wrong side. Some famous Chef like Gordon Ramsey and the French headchef Cyril lignac are also great inspirations for me because they had and still have big impact on culinary art and gastronomy. I used to watch their reality shows earlier and every time I was excited to become a like them in the future.
