We had the good fortune of connecting with Elin & Andy Trousdale and we’ve shared our conversation below.
Hi Elin & Andy, Let’s talk about principles and values – what matters to you most?
Integrity is crucial to us. It has always been the driving force behind what we do and how we live our lives, especially when it comes to our business. From the sourcing of the products we menu, on to the preparation all the way through to the presentation of the food, it’s all done with a true sense of pride and care. We have full 100% control over every single ingredient utilized in our restaurant. We understand food and strive to serve the most pure unprocessed food products we possibly can (foods that contain zero chemical additives). We feel really good about all the extra steps and care we take to provide our patrons with delicious dishes made from scratch from start to finish, from breads to desserts and everything in between. It’s a lot of work and so worth it, because we are all worth it.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Intimate upscale Bistro with fantastic creative & classical dishes, expertly prepared by chef/proprietor. Professional service in a relaxed ambiance making it your home away from home. Wonderful for small celebrations. It’s been a long rocky 20 years with many ups and downs, however, we proudly stayed on track always anticipating and preparing for new challenges by having the ability to modify what we do at the drop of a hat. This is crucial to stay in business. Business must be prepared to change as times changes. It’s not easy, however, we are always up to the task required. Creativity is essential.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Long walk along a local beach, visit to local brewery somewhere, stroll around Mizner Park to look at the nice shops and people watch, Day out in Miami to include Wynwood gallery hopping & Miami Design District for day into evening shop, stroll and meals, Little Havana for an upbeat fun and something different and can’t forget Sushi Suiite in South Beach and sunset sushi in Boca Raton both by chef David Bouhadana.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Our wonderful, loyal patrons deserve a huge shout out for doing everything they possibly could do to help us through this Covid-19 crisis. Frequently ordering food to go, dining in on occasions, purchasing gift cards, leaving very generous gratuities – all these acts of kindness and generosity have been critical in helping us to stay in business as we struggle through this terrible pandemic situation. We realize more than ever the wonderful balance and appreciation proprietors and patrons have with one another and we remain forever grateful for our hero’s and angels. who saw us through, adapting along with us through the new normal ways of interacting with one another.
