Hi Fritz, we’d love to hear about how you approach risk and risk-taking
Risk played a big role, I left Florida to go to New Orleans with about 200 bucks in my pocket at the age of 20 just to seek knowledge of my career with no place to stay or place to eat till I secured a job, but the biggest role was My grandma risking her life, I think twice to come to America and worked her tail off to get her family to this country, which is something I got to hear after her funeral, so I guess risk has to be a part of your life if you really want something
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
So as a private chef I go into people house and cook them a Gourmet meal In their kitchen, I can cook about 7 different cuisine plus pastry and cocktails, from bachelorette parties to yacht to business occasion, everything is made from Scratch, in a couple of months I will be Acquiring Food truck so I can expand to work music festival, private parties, or just have a location, but all of this is going to take me risking a few more of my time which is something I would gladly do, as a kid that grew up in between the poor to low middle class family, you learn a lot and taking chances is part of the process
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
The art district is the best, I like to create and looking at a different form of art gives me new ideas when it comes to plating
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Besides a couple of my teachers and family (mom), it’s really my grandma, from send kool aid to us back in Haiti, when I was a child that sparked my interest to finding that cooking book catalog in her house while I was helping clean her apartment as a young child, I worked my tail off risk relationship ( etc.), just to make her proud, I remember when I came back to Florida after some years and one of the first thing I can remember is her saying Fritz I was looking for you on those cooking tv channels, when you going to be on, I wanted that feeling of making her proud and happy, but since she passed away, I’ve been pushing myself to be the best I can be if not for myself it for her
