We had the good fortune of connecting with Graziano Sbroggio and we’ve shared our conversation below.
Hi Graziano, can you tell us about a book that has had a meaningful impact on you?
We always support our community by participate at charity event, donate food to non profit organization, focus on educational program and school.. keep our restaurant the greenest as possible by participating in recycling program, use biodegradable material when possible.
What should our readers know about your business?
I am in the restaurant business since I was 14 years old, for the first 13 years of my life in Italy the country that I am from, then in 1990 I move to the City that today I call home, Miami. Currently I own and operated with a great team and partners 8 Restaurants a catering company and a wholesale bakery under the umbrella the Graspa Group, the restaurants are; Spris Pizza with locations in Lincoln Road, Midtown, and South Miami. Segafredo Cafe with locations in Lincoln Road and Bayside Salumeria 104 with locations in Midtown and Coral Gables Esotico Miami located in the Art and Entertainment Sottosale located in Biscayne Blvd. Spuntino catering and bakery. When I arrive in Miami although I was a working in the same industry in Italy, I immediately realize that it was different here and I need to adjust quickly. At first it was pretty hard, away from the family and friends, the restaurant wasn’t busy enough to paid the bills, it felt like that I was working very hard and not get much result and I was blaming myself at first. I did not realize that I was going trough is what I call University of Life. It took several years to find the right formula and I will say that part of my success is the fact that I am a bit stubborn, I was not accepting any failure and I did not give up at the obstacles in front of me but rather I start to make changes to achieve the success I later had . I am a pretty humble person and I will say that part of winning formula that my team and I still have it in place today is listen to our patrons, make then feel that their opinion is very important to us, if you show that you are listening to your clients will became you best supporter. The restaurant industry is a very hard, long hours, a lot of stress and most if the time little financial rewards, and only people that had a strong passion will be able to survive, I always say that its not a Job with long hours its a way of leaving, your life is the restaurant.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Its very easy to impress tourist in Miami, the weather the light, the natural beauty of the City help you to impress anyone. I will start the tour of the City from from Miami Beach, show them the beaches, the Hotels along the ocean, Ocean Drive, Lincoln Road with a stop at Segafredo at the Colony theater not only because is one of my places but because it remind me of a cafe in Italy where you can sit down and spend hours chatting with you friends ect ect. one of my favorite lunch spot is Milos always great fresh fish and professional service. Ones they have a pretty good feeling of Miami Beach i will move to downtown and Brickell with the those new building that has change the scenery of Miami in the last 10 years it has now a vibe like a big metropolis a stop for a drink in the rooftop of the East Hotel is a Must, best view of Miami. Although its 30 years I am leaving in Miami I am still impress of the different culture that you can find in this City, with less than 1 mile from Brickell you can be in Little Havana and fell that it will be in a different country, Cuba, perhaps you can stop for a Cafecito in one of the various ventanita that you can find along Calle 8. Continuing the visit of our City I will go to see Wynwood and the various Art Galleries’ and show them how an industrial area until few ears ago, has develop to one of the top attraction, you can still find some old industrial warehouse next to a fancy Restaurant. we cannot leave the area without strolling by Midtown, a new residential portion of our City with a lot of young resident that populate this new area and teh surrounding restaurants, you can find two of my there; Salumeria 104 and Spris Pizza. right next to Midtown you find Design District the most upscale shops in Miami. If I had more than one day to show Miami I will choose to give my friend a tour of seeing Miami by Water by going out in a boat and visit the various area and stop for lunch at teh Boaters in key Biscayne.
Who else deserves some credit and recognition?
I would like to thanks firstly my wife Silvia for the support, strength and encouragement she give me for every new venture I did even if this will resulted in taking time away from her and the 3 kids; Filippo, Leonardo and Giulia. A book that had a large impact to my business and my life was; “The New Leaders” by an Italian Author Paolo Ruggeri. this book really open my mind and make me change the way I was handling my business, another book that teach me a lot is; Setting the Table by Danny Mayer a fellow restaurateur and a mentor for me. The team member along with my partners are the reason for my success and without them I will not be where I am today.
