We had the good fortune of connecting with Jeslie Monert and we’ve shared our conversation below.

Hi Jeslie, maybe we can start at the very start – the idea – how did you come up with the idea for your business?
It all started in October of 2022. My mom loves pavlovas and I had never tried one before. I decided to order one for her on her birthday and surprised her with it. As soon as I tried it; I was mindblown by all the texture and flavors. I told myself; I have to learn to make this. Thanksgiving came around the corner and I attempted to make it. I kept researching and when Christmas came I knew I was on to something hence my family loved it. I kept practicing and come Jan 2023 I had it down packed and decided it was time to open my small business: 305pavlova. The rest is history!

What should our readers know about your business?
Starting 305 Pavlova has had alot of competition. I believe just like any business you begin. Its making sure though what you do sets you apart from the rest. 305 Pavlova just begun and although we have many plans for the future. What sets us apart from the rest is the dedication we put into our work. From our meringue and the round detail we give it which very few pavlova companies do to the touching of the nutella and dulce de leche and strawberries on top. Its a very nice presentation as well as delicious taste. 305pavlova just begun and we are growing. Growing at a faster pace than what I expected. These cakes are new, delicious and so delicate and sweet. Eventually, we would love to open our own local bakery. We place everything in gods hands.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Definitely the beach to start off the day. Getting a nice tan in the warm weather and soaking in the cool water and then having some lunch at smith & wollensky. Afterwards changing outfits to head towards Doral area wheres theres many shops in cityplace. Spending the afternoon there until its time for lunch where we head over to Cooper hawks. There yummy variety of food and wine will keep you there until closing time. Once completing that it nice to walk around and enjoy live music to finish off the day
