We had the good fortune of connecting with Joaquin Ortiz and we’ve shared our conversation below.
Hi Joaquin, do you have any habits that you feel contribute to your effectiveness?
With out question it would have to be perseverance. This may sound like a typical answer, but every entrepreneur knows that with out perseverance there is not way to be successful. If you are the type of person who gets discouraged easily or after getting rejected you question your idea and concept, then being an entrepreneur is not the direction to go in. You have to be willing to persevere through all the difficulties and come out stronger and more committed to your brand than before.



Alright, so let’s move onto what keeps you busy professionally?
There are several reasons why people go out to eat. The main reason it is that people don’t want to cook at home. That’s followed by the convenience of going out to eat, but most importantly, deep down inside people want to learn something when they go out. We are naturally curious as humans and when we go out to nicer places, places with artistry we look forward to discovering something new or trying something different. Therefore it is my belief that as restaurateurs we have an obligation to think big and get creative, to push the boundaries of what gastronomy is and present something new and exciting to our guests. That philosophy is so enjoyable to me. Getting in the kitchen and experimenting with food trying recipe after recipe and working to pinpoint perfection is so much fun! I’m in love with the method of it all. So my advice to any aspiring chef is, don’t be complacent and accept the norm. Push yourself and get as creative as you can in the kitchen.


Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
So my best friend and I are pretty wild and we love extreme things… I’d like to start with Skydive Miami, if you haven’t jumped out of a plane at 10,000 feet you are truly missing out on the beautiful skyline of Miami. I also love going to the Everglades and doing some mudding in my 4 X 4 that’s a lot of fun! There are several bridges and dams throughout Miami that if it was legal we would probably jump off them but considering that it’s illegal we definitely wouldn’t do that. The World Erotic Art Museum on Miami Beach is a lot of fun! It’s definitely a great place to take a date, I don’t know so much about taking my best friend there but it’s still an awesome place to visit. I love sushi so if I wanted normal priced good bang for my buck sushi we’d go to Katana where the sushi passes in front of you in little boats. If I wanted to spend some money and have a truly incredible omakase sushi experience I go to Mr. Omakase in Downtown Miami. Back to adventurous things… I’m big on rock climbing so going to The Edge Rock Climbing Gym would definitely be on the list. Can’t forget getting up to Xtreme Action Park and racing some gas powered go-karts as well. Back to food, the best meal I’ve had in Miami to date has been at Joel Robuchon L’Atelier if you like fine dining this is the place to go. It’s oyster season can’t forget a quick stop at The River Oyster bar for a couple beers and some delicious oysters. Time for dessert? There’s always time for dessert, a quick stop to Fireman Derek’s Bake Shop. And lastly if you want to try the best pancakes in the entire country swing by my spot, Jealous Fork.


Who else deserves some credit and recognition?
I went to Johnson & Wales University and in school I learned the fundamental basics of my field. Universities are good places for that base, however they don’t compare to the guidance and tutelage one gets in the field. If I had a “Mount Rushmore” of people who have made an impact in my professional career and still to this day continue to do so. I would put up Patrick G, John R, Ian F, David B, and Norman VA. These titans of the hospitality industry have shaped me to be the successful entrepreneur I am today. I’ve learned everything from understanding quality of product, the artistry of gastronomy, excellence in service and business finances from them over the past 20 years. Their teachings have truly defined my philosophy as a businessman.
