Hi Jorge, what is the most important factor behind your success?
Relentless clarity has been the engine of Grease Connections’ growth. From day one I refused to hide vital information in industry jargon or let customers wonder what happens to their used cooking oil after pickup. Instead, I told the story in plain English, showed every drum, caddy, and automated tank on video, and published transparent pricing and compliance guides. That honesty built trust, and trust opened doors from a lone food truck client in Little Havana to statewide partnerships with national chains. Once that flywheel started, consistency kept it spinning: same day answers, spotless audits, and a service team empowered to fix problems before they reach my desk.

Let’s talk shop? Tell us more about your career, what can you share with our community?
My art hides in greasy alleys. Where most see a dented drum, I see a circular economy that keeps chefs cooking and rivers clean. Grease Connections began after I watched a hauler bury fees in eight point font; I promised the opposite radical transparency, rapid response, spotless compliance. Day one was just me, a rented pump cart, and a swarm of doubts. Trucks broke, drums tipped, inspectors arrived early, but I treated every setback like an A/B test: measure, iterate, simplify. The lessons stuck clarity earns trust, consistency multiplies it, integrity compounds faster than profit. If you bite into a fryer fresh empanada tonight, there’s a quiet chance our team made that moment possible, and that’s the craft I’m proud to practice.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
When my best friend lands in Miami, we keep it simple because the inbox still owns half my week. I point them to a loft in Wynwood, hand them a cafecito, and tell them to wander the murals until I clock out. One evening we share stone crab and Key lime pie at Joe’s while the sunset stains South Beach pink. Mid week we sneak away to Key Biscayne: a slow bike ride to the lighthouse, a hammock nap, and snapper at Boater’s Grill. On Friday night, after the routes are clear and the grease drums are quiet, we sail Biscayne Bay, music low.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Every time someone congratulates me on Grease Connections’ traction, I flash back to a dim café in Coral Gables where Percy Martinez first slid a legal pad across the table and asked, “What will your company fight for when no one’s watching?” Percy isn’t just an attorney with a razor sharp mind; he’s been my sounding board from scrappy startup nights to seven state expansion. When a big hauler tried buying us out, Percy reminded me that selling vision for a quick check is the costliest invoice. When I panicked over our first EPA audit, he coached me to lead with transparency and invite inspectors in like guests. His mantra integrity compounds faster than interest anchors every decision I make. So here’s to Percy: the mentor whose quiet wisdom turned my hustle into a mission.
