We had the good fortune of connecting with Maileika Chacon and we’ve shared our conversation below.

Hi Maileika, can you walk us through the thought-process of starting your business?
Bites & Bliss by Mai came from a mix of creativity, faith, and survival. I’ve always had a passion for hosting, design, and making people feel special—but turning that into a business was never part of the original plan. It all started when I created a charcuterie board for a small gathering, and people loved it. From there, I realized I could bring together my love for food, presentation, and events into something meaningful.

At the same time, I was going through personal and financial challenges. I didn’t have a stable job, and I was doing everything I could—driving, delivering, working from home—to make ends meet. That’s when the idea became clear: instead of waiting for an opportunity, I would create my own.

I invested what little I had into building a custom cart, developing a brand, and learning how to promote myself. I wanted my business to feel elegant, joyful, and full of flavor—just like the experiences I love to create for others. It hasn’t been easy, but this journey has given me purpose and a way to grow while doing something I genuinely love.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
About My Business

My business, Bites & Bliss by Mai, is a passion project turned reality—a mobile charcuterie, candy, and ice cream buffet designed to bring delight and elegance to events and gatherings. What sets us apart is the interactive experience where guests get to create their own mini boards, choose their favorite candies, or customize their ice cream treats exactly how they like.

I’m most proud of building this from the ground up, especially as someone new to entrepreneurship. It hasn’t been easy—there were moments of doubt, financial hurdles, and the challenge of learning everything about running a business while balancing other responsibilities. But I overcame these challenges by staying persistent, seeking advice from mentors, and continuously learning from every experience.

One important lesson I’ve learned is that success is a journey, not a destination. It requires patience, flexibility, and a willingness to adapt. Also, the support of family, friends, and community is invaluable.

What I want the world to know about me and Bites & Bliss by Mai is that this business is more than just food—it’s about creating moments of joy and connection. Every event becomes a unique celebration where guests can personalize their experience and enjoy every bite with style.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Favorite Spots in the City

If my best friend were visiting for a week, I’d make sure they experienced a mix of local flavor, beautiful views, and some fun Miami vibes. Here’s how I’d plan our week:

Day 1 – Beach & Sunset
We’d start the trip with a relaxing beach day — I absolutely love being by the water. One of my favorite things is just laying on the sand, enjoying the breeze, and disconnecting. Later, we’d head to South Pointe Park to watch the sunset and maybe grab something casual by the waterfront.

Day 2 – Brunch & Art
Saturday is brunch day! I’d take her to Negroni in Doral, one of my favorite brunch spots. The vibe, the food, the drinks — it’s always a good time. After brunch, we’d head over to Wynwood Walls to explore the street art, take some fun photos, and maybe grab a cafecito or dessert in the area.

Day 3 – Little Havana Experience
We’d spend a full day walking around Calle Ocho, enjoying Cuban coffee at La Colada Gourmet, having lunch at Versailles, and soaking in the music, culture, and energy of the neighborhood. If we’re lucky, we’d catch some live music or domino matches at Domino Park.

Day 4 – Water Adventure & Night Out
We’d spend the day on the water — maybe rent a boat or do a bay cruise to enjoy the views of the Miami skyline. At night, I’d take her out to Brickell for dinner at Komodo and end the night with drinks at Sugar Rooftop — a must for the city lights!

Day 5 – Nature & Chill Day
Time to slow it down. We’d visit Fairchild Tropical Botanic Garden or Matheson Hammock Park, then have a relaxed dinner in Coral Gables. It’s the perfect mix of beauty and peace after a few busy days.

Day 6 – Shopping & Sweets
We’d go shopping at Aventura Mall or the Design District, then do a little dessert tour. I’d take her to Salt & Straw, Fireman Derek’s, or Bachour for something sweet and unforgettable.

Day 7 – A Blissful Farewell
On the last day, we’d keep it cozy and personal. I’d host a small, private tasting experience with Bites & Bliss by Mai, my charcuterie and dessert cart, where she could create her own mini board or ice cream cup. A perfect way to wrap up the week — sharing what I love most with someone I love.

Miami is full of vibrant places and hidden gems, but to me, the magic is in the mix of cultures, flavors, and moments you create with the people around you.

I want to give a huge shoutout to my family and close friends — their unwavering support, encouragement, and love have been the backbone of my journey. Without their belief in me, I wouldn’t be where I am today.

Also, I’m grateful for the mentors and coaches who generously shared their wisdom and pushed me to grow, even when I felt stuck. Their guidance made a huge difference.

Lastly, I want to recognize the power of community — every little encouragement, every kind word, every cheer along the way has helped fuel my passion and keep me moving forward.
