We had the good fortune of connecting with Nicole Retchin and we’ve shared our conversation below.

Hi Nicole, what was your thought process behind starting your own business?
Since as long as I can remember I knew I wanted to be a teacher or a chef. I wanted to make an impact on others. I’ve always had a passion for food, health & fitness. I decided to go into culinary arts where I graduated from Johnson & Wales University. As I grew my business I worked at a local Eating Disorder Facility where I was able to help women and give cooking/nutrition classes. Since then I have expanded my business immensely. I purchased my own commercial kitchen in early 2021 and that was a game changer. My staff and I are currently producing over a thousand meals weekly. Being a single mom and in charge of my own future has led to much learning and growth. I am grateful every day to wake up, go to work and truly do something I love.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I would have to say the biggest thing that sets my business apart from other meal delivery services is that I personally am in the kitchen every day…. These are my recipes & I still portion every meal. I make sure each meal is visually appealing, healthy as well as delicious. I put my heart into every meal I create. I am the toughest critic of my meals and am always striving to make them better. Throughout being a chef I’ve had several doors close on me. I’ve wanted to quit so many times.
I remember years of renting kitchen space and having to deal with changing staff, logistic issues, drivers calling out hours before a shift, product not arriving on time, etc.
I have never given up because I’ve always believed in my meals. I believe in eating a variety of food and not eliminating any food groups, over a period of time will help you feel and look your best. Each meal I make includes a lean protein, complex carbohydrate, essential fat and lots of vegetables.

Who else deserves some credit and recognition?
I wouldn’t be where I am today without the love and support of my family and friends. You know who you are and I am forever grateful.
I want to give a special “shoutout” to Rosina Pellerano M.D. Thank you for guiding me through life and believing in me when I had trouble believing in myself.
I also want to thank my boys. Thank you for allowing me to do what I love. I do it for us!
