We had the good fortune of connecting with Paul Bishop and we’ve shared our conversation below.

Hi Paul, we’d love for you to start things off by telling us something about your industry that we and others not in the industry might be unaware of?
Just how important design is to the success of a venue. We’re not just talking aesthetics here, but how a space flows and functions. It is one of the biggest factors in determining how users interact with the environment they’re in.

Equally, a well-designed venue doesn’t guarantee its longevity. The best projects are where we work closely with our clients, chefs, and operators – as it is a combination of all our expertise that allows a project to reach its maximum potential.

Alright, so let’s move onto what keeps you busy professionally?
We always say it doesn’t matter if you’re running a restaurant for the first time, or whether you’re a manager for a global hotel chain, we are able to support you on your journey. Thanks to our many years of experience and our ability to look at a project not just in a typically perceived design sense but as a much larger picture. Bishop Design are dedicated to bringing the best experiences to the end consumer which means going above and beyond designers’ usual confines where we have the ability to talk about menus, operations, staffing, uniforms; everything that contributes to the establishment of a successful venture.

Since I last spoke to Voyage MIA in December 2021 following Bishop Designs expansion to Miami, things have been progressing very well. I can’t wait to share some awesome project updates with you soon!

Back in Dubai and the Middle East we have been devoting a lot of our time to some phenomenal hospitality projects. From millennial-driven lifestyle hotels to high-energy party restaurants, I am very proud of the unique experiences we are able to bring to the region.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I have fallen in love with Miami and get very excited when we have guests coming over to show them the Magic City. Being in the hospitality industry, it is my passion to discover and revisit interesting venues. I could build a whole itinerary around that.

My heart is in Wynwood. As we would go to soak in the street art, Doya would be our spot for an al fresco lunch. Then we would stroll some more through the ever-changing streets, finishing the night at 1-800 Lucky with stellar Asian street food and great beats.

While in Miami, a visit to an art gallery is a must. I would take our guests to the Rubell Museum and combine it with a mouth-watering dinner right there at Leku.

For a night of music, wine, and laughter, we would head to Lagniappe or the Center for Subtropical Affairs. Those places are magical and despite being a designer, their eclectic style draws me right in.

Of course, we could not miss out on visiting South Beach. On the way there, we would stop at Lucali in Sunset Harbor for a proper New York-style pizza with legacy. After a short Art Deco tour, we would crown the trip with a treat at Carbone as the grand finale.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Through the most serendipitous play of faith, one of the first people I met in Miami was Mark Caesar. Full of stories that make your jaw drop and belly hurt from laughter, Mark has made some of the best venues in Miami come to life and whatever he touches turns to gold.

Mark and his wife Marta have also established the Caesar-Iglesias Family Foundation which focuses on supporting several causes, including a commissary kitchen providing meals to those in need, and programs helping underprivileged youth access education.
