Hi Sebastian, we’d love to start by asking you about lessons learned. Is there a lesson you can share with us?
The most important lesson my career has taught me is that everything is built with consistency and passion.
It doesn’t matter how good a product or idea is if you’re not willing to work for it every single day. I’ve learned that real results don’t come overnight, but when you do things with purpose, attention to detail, and heart, people notice. I also realized that surrounding yourself with a good team, staying grounded, and never stopping learning are key to growing and sustaining what you build.


Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Absolutely – RÚSTICO is not just a foodtruck, it’s a concept born from fire, identity, and Argentine tradition. We specialize in real Argentine parrillada – no shortcuts, no compromises. We work only with premium, hormone-free meats and focus on offering a true cultural experience around the grill.
What sets us apart? Authenticity. In Miami, where food concepts are often driven by trends, we bring something deeper: the soul of Sunday asado, the intensity of Argentine fire, and the sense of community that comes with sharing a table full of grilled meat. Everything from our branding to our menu reflects that — raw, real, and unapologetically passionate.
We’re most proud of having created a brand that speaks for itself. People feel it — in the flavor, in the visuals, in the energy around the truck. RÚSTICO was built from the ground up, through trial and error, tough conversations, and a lot of courage. It wasn’t easy. We had internal battles, logistical chaos, and moments of burnout. But the vision always stayed alive. And with each event, we grew — not just as a business, but as a team, and as a brand with a real voice.
If there’s one lesson we’ve learned, it’s this: what’s real always stands out. Even in a saturated market, people connect with what feels honest. And that’s what we want the world to know — RÚSTICO is not a gimmick. It’s a living brand, forged in fire, representing who we are and what we believe in.


Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my best friend came to visit Miami for a week, I’d make sure they get the full spectrum — from iconic Miami spots to the hidden gems that give the city its real flavor.
We’d probably start with a sunrise at South Pointe Park, grab coffee in Wynwood, and walk around exploring murals. For lunch, we’d go to Mandolin Aegean Bistro or La Natural for something fresh. One night, I’d definitely take them to experience an Argentine asado at RÚSTICO — because there’s no way I’d let them leave without tasting real parrillada.
We’d hang out in Coconut Grove, maybe catch a sunset in Key Biscayne or head up to Hollywood Beach for a change of pace. Nights out? Broken Shaker for cocktails, then Lagniappe for wine and music under the stars. On another day, we’d go on a boat ride through Biscayne Bay or just do a BBQ at home, in true Argentine fashion.
I’d also show them spots with strong local culture — Little Havana for music, dancing and history, or a game night at a Miami United FC match if the timing works. Miami is so much more than clubs and luxury — it has a rhythm, a mix of stories, cultures, and contrasts. That’s what I’d want them to feel.


The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
If I had to give a shoutout, it would go to everyone who was there when none of this was visible yet. Those who, through a conversation, a push, a critique, or a look of encouragement, helped me keep going. I don’t have a specific mentor, but I’ve had many moments of clarity shared with key people — some still close, others who came and went but left their mark.
RÚSTICO isn’t the result of one person. It’s the outcome of intense energy, visions, wins, and disagreements. Many hands and minds shaped this — some aligned, others clashing — but all of them essential. Because what’s real isn’t always harmonious, but it’s always alive.
Rústico is that: the sum of what we learned, what we lost, and what we slowly built with time, fire, and a lot of meat on the grill. Today it looks like a foodtruck, but it’s much more than that. It’s a brand forged in contradictions, passion, and tough decisions. And that’s never built alone.
