Meet susana perla- maniera | Macarons baker

We had the good fortune of connecting with susana perla- maniera and we’ve shared our conversation below.
Hi susana, we’d love to hear more about how you thought about starting your own business?
One of the main reasons I started my own business was so that I could be home with my kids. Secondly I love baking. It relaxes me and is my form of meditation. Even when I’m hectic trying to get orders done. Before the pandemic even started I was looking for something that I love doing. And baking has always been a passion I had since I was a kid. So I made the decision to learn how to make macarons. It was a bit of an arduous process, learning on my own how to make them. However with each batch I knew I was getting closer and closer to getting it right. There are still days where things can go wrong. They are the most finicky dessert to make and they definitely keep you on your toes.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I believe that one of the things that sets me apart is my flavour palate. I don’t make things overly sweet which is what you are to often in desserts. I try to balance the flavours just right. And I prefer to use real ingredients to enhance my flavours instead of artificial flavourings.
To get to where I am today took many overnight hours testing, baking, tasting and baking again. It wasn’t always easy but it has gotten easier. I’m not one to dwell on hard moments. I work hard, reorganise when I need to and try to find the best way to accomplish what I need to do. I guess one of the things I’ve learned is how to prioritise my time.
I want people to know that Whisk and Flick is there to bring smiles and warm hearts. That Im always here for my community.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Oh well let’s see. I would take them on a drive to see the most beautiful parts of the city. Driving through cutler road, with its lush trees and beautiful landscape. There’s a great little market on red road. You can pick up lunch and head to have a picnic on the water. Drive through the gables on coral way. Have dinner in Bueno vista at Shokudo. I would take them to walk down Lincoln road, and have a coffee and the best pistachio croissants at Rosetta bakery. Go for a a day to downtown. Do some shopping, go to bayside listen to some Latin music and have dinner at Niu Kitchen. Their food is perfection! I would take them to see my husbands shop. Zekes music exchange to check out some guitars. Then I’d take them to have dinner at Via Verdi.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Well first and foremost it would be my husband who has always supported me in this dream. He pushes me to always do better. My kids for always rooting me on. My sister, who through her own business has supported me to grow mine. My parents and my friends. And there’s also one last group. The people that helped me learn all the tricks of the trade in our macaron group.
