We had the good fortune of connecting with Troy Ganter and we’ve shared our conversation below.
Hi Troy, what do you attribute your success to?
Our business is built on relationships and service. We focus on developing one another and giving back to our community: we believe profits are lost without purpose and our main purpose is to serve one another: We are passionate about building a healthy environment where we are always learning and always growing. We embrace feedback as gift, our core values are based on the acronym LEADERS. Love, Effort, Attitude, Discipline, Efficiency, Respect and Service.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Our family business began in 1976, at Seafood World, a fourth generation restaurant known for island style Bahamian fare combined with a fresh market. Papa always said our house was built on stone crabs and conch. I think i was born in middle room of our restaurant. I learned to cook at young age and my parents traveled the world with me to show me different cultures. We were never rich but my father always thought it was important to travel and eat rather then live in a big home. I love the hospitality industry, we are passionate about our patrons. Our business is now built on relationships and service. . I have been in recovery for 7 years, so my life is dedicated to service and helping others. We take pride in our team and patrons and try to give back to others and help our community grow. My wife and i opened Papa’s Raw Bar in 2014 next door to our family hole in the hole to create a local hotspot and pay homage to my father and his legacy. During the pandemic, we had to make some adjustments to survive. So we combined both restaurants as one. Now it’s all Papa’s Raw Bar. At Papa’s we have the fresh market, a new speak easy venue for private parties called the Barrel Room, and the restaurant which features all the old school favorites from the legendary seafood world menu to the local rawbar favs, the best of both worlds.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
As mentioned our trademark is Eat Drink and Be Local® we thrive on competition and use it as fuel to help each other grow. It’s imperative to support your local community and small family businesses.
The perfect week would be lunch at the infamous whales rib for some Rick shrimp, whale fried and the keywest sandwich. On your way back over the bridge, you have to check out the new Cove Brewery on the cove shooing center and pair some great local beers with some crasian dim sum from the Asian Kicthen, Won-Tom’s next door., snack on a wagyu smash sando, soup dumplings and a Gochujang eggroll. The Cove Plaza is a gem full of local family owned businesses.
The modern rose and sticky bun should be a start to each day. And you can miss out on casa Maya for some truly authentic Mexican fare and craft cocktails.before you head to Ft. Lauderdale you gotta hit Papa’s Raw Bar at least twice to share all the goodies, sushi, fried rice, tacos, stone crabs, fried wahoo bites, the classic whole fried fish and the infamous beer battered Brownie. I would work your way down to Ft. Lauderdale and visit our fiend Rino, at heritage for a penne ala vodka pizza, Arancini, and worlds best squash blossoms. There’s a new local hot spot by heritage named, Miso, owned by local celebrity chef Thaun Lam, serving up Japanese’ tapas and exotic libations
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My father, Papa Hughie, is my biggest mentor, he was my best man, he is my best friend and he is still my go to council. He always encourages me to be compassionate, patient and diplomatic. Hes shown me how to put God and family first in everything we do. I try very hard to surround myself my great people who keep me inspired and hold me accountable. I’m grateful for my wife, Cassie, who has the biggest heart. Her slogan is “kill ‘em with kindness” she keeps me even keeled, and shows me how to be strong and courageous. It’s never easy working with your spouse, yet we have always found a way to shine and help each other grow.
I’ve been sober for 7 years, and fortunate to have an incredible sponsor, Matt Williams, and a huge network of brothers who hold me accountable, teach me humility and keep me in the effort business.
I have to give the most credit to my Lord and Savior. We have been on a mission to bring His kingdom to our workplace, recognizing that our business is His business and how we are responsible for being good stewards with our money, time and most importantly service. We believe if we keep our focus on pouring into one another and developing each other “iron sharpens iron” that financial success will be the bi product of our time and efforts.
