We had the good fortune of connecting with Victor Colmenarez and we’ve shared our conversation below.
Hi Victor, we’d love to hear more about how you thought about starting your own business?
After more than 10 years of hard work in the restaurant industry and after learning and working in almost all areas of a restaurant, I decided to pursue my passion for great food and quality service. I learned that to break new ground in this industry I had to create something new, something unique and special.
I decided to merge flavors, techniques and the decorative minimalism of restaurants with the informality of food trucks, fast food and “food porn”. This matched perfectly with my personality and the entrepreneur that runs through my veins. This entrepreneur was taught from a very young age by the best, my parents and grandparents. Being able to see them as a child creating and managing their own businesses in Venezuela. Mede me learn and develop unique skills. But this time I decided to turn things a bit risky for me and I decided to open and start a business in the United States, this is how the very first Burda was born in 2018.
What should our readers know about your business?
As you can read in my prior answers, im a immigrant in the united states I came to this country for the first time when I was only 18 years old, recently graduated from high school, very poor english and maybe around $500 in my pockets. After a few months I started working on a TGI Fridays and I think it was one of the most appreciated moments of my life, I worked there for around 4 years, thanks to them I can speak and write english right now (even that i was working with 85% Haitians for the first 2 years) LOL. Then i started escalating positions from dishwasher, to cook, FOH, busser, hostess and server. This time there gave me a lot of knowledge on how big corporate restaurants are manage and gave me all the tools necessary to work in fine dinning restaurants which are run completely different than the fast peace corporate restaurants. After more than 10 years in different ares from back of the house to front of the house. I decided to open my own food truck on 2018 and as today on 2022 I currently own and operate 3 different food trucks, a virtual restaurant with more than 10 different sales channels. I created the Eat Group that operates my brands Burda (3 Locations), Los Vatos (2 Locations) Da’Chick (2 Locations), La Empanaderia y Mc Yeezys!.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Well, we are in Miami. For me this is one of the most beautiful and unique cities of the world, no only for the beautiful high rises, beaches or nightlife. This city has unique multi cultural population that brings lots of authentic flavors to restaurants, so take her or him out for dinner, breakfast or even a cafecito it would be a great experience. A nice car drive to miami beach is always a good idea to showcase the beautiful miami, brickell skyline. This city has endless plans for everyone, if you want something super miami beach you can go and skate around the ocean drive area or have a fancy dinner at Michelin Star restaurant.
Who else deserves some credit and recognition?
Wow, this is going to be though… I believe that every person that passes thru our life has left a little on us and that make us what we are now. No matter if it was a something great, normal or bad experience. We all have learn from this experiences no matter what.
So first I will have to thank god and the universe for allowing me to have the oportunity of learning from everyone I met in this life so far. I been very lucky to have such a great parents and grand parents. I won’t be here at this time writing this article if it wasn’t for the endless love and will power of my mom, she definitely plays a huge role on all my success and last but no least mi Abuelo. He was one of the greatest entrepreneurs I ever met.
