We had the good fortune of connecting with Amber and Jay Felton and we’ve shared our conversation below.
Hi Amber and Jay, what matters most to you?
We value consistency because we want our guests to know that they can come back time after time and enjoy the same experience with our food and service.
We believe the key to consistency is employee retention. We ensure this by providing an all-house tip pool, paying over industry rates, promoting from within, and teaching with positive reinforcement.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
We had a unique experience when we first came to Florida in February 2020. Since it was a month before COVID hit, the timeline for Hive Bakery & Cafe became very uncertain. Sara’s creative vision, mentoring spirit and unwavering faith gave us the opportunity to collaborate with her to create our most iconic dishes and the beautiful aesthetic of the restaurant.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
For the best tacos, we love Cholo Soy in West Palm Beach. For the best pizza, we love Elisabetta’s white pizza. Our favorite date night spot for a creative twist on Indian classics is Stage in Palm Beach Gardens. For craft beer, live music and dancing, we love to take friends to Matthew’s Brewery in Lake Worth.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Jay – “The Publican in Chicago taught me how to truly cook professionally and it was there that my appreciation for wood-fired cooking began. One of the most valuable things I learned is when you use high quality ingredients, you only need a few of them.”
Amber – “I developed a strong foundation and appreciation for French pastry at The French Pastry School in Chicago. I learned how to work with chocolate, laminate a croissant, decorate a cake and bake a loaf of bread. In addition to school, I had the honor of working with some amazing individuals who taught me a great deal over the course of my career.”
