We had the good fortune of connecting with Lawrence Lessing and we’ve shared our conversation below.

Hi Lawrence, what was your thought process behind starting your own business?
I felt like there was a big opportunity in the breakfast sector to elevate the food and ambiance. Breakfast seemed like it had been overlooked by many of the best operators. As an added bonus, it allows our team to be in the restaurant industry without having to work crazy hours because we are closed by 4 p.m.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Hatch is a bright, fun, and quality brunch concept that just opened in Fort Lauderdale’s Flagler Village. What sets Hatch apart is the people who make up the business. We look for positive, upbeat employees that like to help others and have great potential in the hospitality field. That creates a fun, family-friendly environment where our team takes care of each other and our guests. I believe that employing people with great personalities, developing their hospitality skills, and recognizing them for their successes are three things you can never do too much of.

I am proud of our team for starting a #DoGood initiative where we strive to be a positive force in our community. For Hatch’s grand opening, we donated half of our day’s sales to Voices for Children of Broward County. Hatch recently hosted the Flagler Civic Association and the MASS District Alliance to conduct their monthly meetings, and our team participated in Heal the Planet’s monthly beach cleanup. Hatch’s #DoGood initiative also includes supporting local businesses. We love working with local vendors such as Pumphouse Coffee and Funky Buddha.
At Hatch, I love being able to learn and work on all different sides of the hospitality business instead of focusing on the same task every day. During college, I shadowed a few people at their desk jobs, and I learned quickly that I wanted a job that provided a lot of variety. To me, it’s important to learn and work in all aspects of a business to lead efficiently and successfully. If you and your team are constantly improving, engaged, hardworking, and wanting to build something special, that’s the dream. In that type of situation, everyone is going to continuously learn and grow. The compound effect of that will lead to success in the end!

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would take them to dine at a variety of unique restaurants in the area, such as Jalisco Restaurante, Doc B’s Restaurant, El Camino, and S3 (Sun, Surf, Sand). If they want to find a good place for golf, I suggest Jacaranda Golf Club or Gulfstream Park!

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I want to give a shoutout to my wife Diana. She deserves a ton of credit for being so understanding when work gets busy and stressful. She supports me through it no matter what.
