Hi Katherine, how did you come up with the idea for your business?
The idea came to me. I had demand after I put together an event for an artist and started networking and started handing out PR business cards in 2009 in NYC,
Alright, so let’s move onto what keeps you busy professionally?
I love what I do and I wake up every day happy. It was not easy in the sense that you have to grind but it was easy in the sense that it never felt like work. Challenges were always looked upon positively as a chance to grow and learn in the process. I have learned to be patient to do things the right way and not to rush. I want the world to know that no matter what happens, never be afraid to do you.

Why I Took a 2-Week Vacation from My 2-Year-Old and Didn’t Feel Guilty About It
When my mom called me up and started complaining about me leaving my 2-year-old son, all I kept thinking was, “When am I going to get this chance again?” My best friend from Miami had come to visit me for a one-month trip to discover some of the most under-the-radar hidden gems in Europe. It was an opportunity I couldn’t pass up, a chance to recharge and explore places I’d only dreamt of visiting.
Cretan Dream
Our adventure began in Crete, at the Cretan Dream Resort & Spa. The moment we arrived, I felt a wave of relaxation wash over me and we were greeted with a Cretan massage and tub soak. The resort was perched at the entrance of Stalos Beach, offering breathtaking views of the sea.
We spent our days exploring the Botanical Park and Gardens of Crete with the hotel’s owner, Petros Kardiakakis, and relaxing at the serene Elafonissi Beach. We had a private wine tasting hidden in the olive orchards and orange trees.
The nights were filled with authentic Greek cuisine at the resort’s Aphrodite Restaurant, where every meal felt like a celebration of flavors.
My week at the hotel was an unforgettable blend of relaxation, adventure, and cultural immersion. Crete is an island filled with maritime adventure, starting with a picturesque drive to Sfakia for a boat ride and a Greek meal on the sea. Returning to the hotel, I participated in a lively Cretan Theme Night, learning traditional dances before enjoying a late dinner. At dinner, the hotel guests came together, joined hands, and danced in a circle across the property.
A walking tour of the Old Venetian Harbour and a personalized shopping experience at Leather Alley were unforgettable, as we snapped photos, did our nails, and went shopping. I even got a new hairdo–bangs! We explored the Famous Lagoon of Balos, where the stunning “Blue Lagoon” provided a perfect backdrop for a day on the boat. Each day was meticulously planned and executed, leaving me with cherished memories of my stay.
The hotel is also excited to introduce new Dark Sky Viewing sessions on Friday nights, weather permitting. The view is exceptional, and it is said that in September, the planets are visible from this vantage point—which is not to be missed for galaxy lovers and Astronomy buffs!
Chia Laguna Resort
We stayed at Chia Laguna Resort in the South of Sardinia, where we lounged in new beach cabanas and indulged in lunch with breathtaking views, while dinners were all about live music, sipping wine, and feasting on Sardinia’s finest fish and pasta.
Chia Laguna Resort rests on Sardinia’s majestic south coast and is a harmonious blend of luxury, ocean, and adventure. I was captivated by the resort’s seamless integration with its stunning surroundings. The golden beaches, lush headlands, and tranquil lagoons filled with pink flamingos created a picturesque setting.
Dining at the resort was a culinary delight. Le Dune restaurant’s après-beach aperitivo was the perfect way to unwind after a day of activities, with its relaxed atmosphere and exquisite flavors. Osteria La Torre’s new Trattoria offered a mouthwatering selection of fresh seafood and live grill options made using locally sourced ingredients.
The resort offers a stunning natural setting and top-notch amenities. Whether you’re an active traveler looking for outdoor activities or someone seeking tranquility and pampering, Chia Laguna Resort has something for everyone.
Olbia at Gabbiano Azzurro
Our next stop was Olbia in Sardinia. We stayed at the Gabbiano Azzurro Hotel & Suites, a family-run hotel known for its warm hospitality. The turquoise waters and pristine beaches of the Costa Smeralda were a sight to behold. The hotel’s staff made us feel like part of their family, and their recommendations for local dining and activities were spot-on. Every morning we would open the windows to be met with a crystal blue sea for miles.
The suite’s contemporary interior design, featuring essential details and natural materials, exudes a timeless style and creates a bright, inviting environment. The glass balustrades provided uninterrupted views of the stunning sea, coast, and horizon. One of the highlights was the large rooftop terrace, accessible via external stairs. Here, I enjoyed the luxury of a 23 m² private swimming pool with a hydromassage system and sun loungers, making it the perfect spot for soaking up the sun while enjoying breathtaking views.
Sicily Adler
Our journey then took us to Sicily, where we stayed at the ADLER Spa Resort SICILIA. I was captivated by the serene beauty of the resort, nestled on the southwest coast of Sicily, overlooking the stunning Mediterranean Sea. The resort’s commitment to nature and sustainability was evident in every aspect, from the eco-friendly architecture to the organic spa treatments. My days began with healthy, seasonal breakfasts that energized me for the day against the backdrop of the rolling Sicilian hills. The seamless blend of indoor and outdoor spaces at the resort allowed me to stay connected with nature at all times, whether I was lounging by the saltwater infinity pool or dining on fresh, local cuisine. I experienced a gin-tasting tour, which was surprisingly fun despite being the only mom in a group of men. The resort’s wine candle spa experience was a unique treat that catered specifically to wine-loving moms like myself. The luxurious spa treatments combined with breathtaking views of the Sicilian coastline are engrained in my mind for life.
Granada at La Esperanza
From Sicily, we flew to Granada, Spain, a city steeped in Moorish history. We stayed at the La Esperanza Granada, a stunning hacienda nestled in private gardens and evergreen forests. The hotel’s romantic ambiance boasts an exquisite collection of fine artworks. We took a day trip to the Alhambra, where the intricate architecture and lush gardens transported us back in time.
Amidst 4.5 hectares of vibrant flower gardens and organic fruit trees, this Spanish Mission-style villa offered a serene escape overlooking the picturesque Lecrin Valley. Each morning began with a delicious breakfast in the Alhambra-inspired courtyard, setting a perfect tone for the day. The hacienda’s meticulously curated antiques added a touch of historical elegance while dining on fresh handmade goat cheese and pizza. Every detail, from the vintage-style bathroom hardware to the handpainted frescoes, was thoughtfully designed, blending local culture and natural beauty.
Venice with The Tour Guy
My experience with The Tour Guy in Venice was a culinary delight that offered an intimate glimpse into Italian culture and cuisine. We were privately hosted in a local Venetian home, which was a fun departure from traditional restaurant dining and allowed me to immerse myself in the heart of Italian hospitality.
Upon arrival at our host’s charming home, we were greeted with delightful aromas of home-cooked dishes. The setting was cozy and inviting, immediately making us feel like part of the family. We started with a refreshing aperitivo, including prosecco and light nibbles, as our host introduced us to the lunch menu and shared stories about the family recipes we were about to enjoy.
Our host, a seasoned cook with years of experience, guided us through the preparation of our meal. We watched as fresh, local ingredients were transformed into time-honored dishes with a blend of skillful stirring, seasoning, and simmering. The host’s passion for cooking was evident, and we were privy to culinary secrets and techniques passed down through generations.
The meal itself was a feast for the senses. We started with a delicious appetizer that set the tone for the evening. The homemade pasta was the star of the show, crafted from seasonal ingredients and bursting with flavor.
Our host regaled us with stories and insights about Venetian culture and traditions. This personal touch added depth to the experience, making it a cultural exchange.
Lisbon at Palácio do Governador
My final destination was Lisbon, Portugal. By the end of the trip, my best friend Shani had flown to Paris and my parents had come to Lisbon to meet me, experiencing firsthand what it felt like to be empty nesters and elderly travelers, exploring with their little girl once again. We stayed at the Palácio do Governador, a beautifully restored palace with modern amenities.
The Palácio do Governador, formerly the residence of the Governor of the Tower of Belém, has been transformed into Lisbon’s most emblematic boutique hotel since 2015. Nestled in the historic center of Belém, this hotel is a remarkable blend of elegance and luxury, making it a must-visit destination in the city.
Located near the River Tejo and prominent national monuments, the Palácio do Governador boasts an extraordinary legacy. Originally a governor’s residence from the sixteenth century and later a Roman fish sauce factory dating back to the first to fifth centuries, the site’s rich history is preserved throughout the hotel. The restoration has seamlessly integrated these historical elements into the hotel’s architecture and interior design, creating an atmosphere that honors the past while offering contemporary comfort.
The entrance features a charming patio with ancient stone fish-salting tanks, while the Reception lobby, set in the former chapel, is adorned with restored original tiles and a wooden altar. Every corner of the hotel, from its vaulted restaurant ceilings to the arches of the ground floor rooms and tile panels in the suites, reveals its genuine architectural value. The Roman ruins visible from the indoor swimming pool add a unique touch to the hotel’s ambiance.
The hotel offers 60 uniquely designed rooms, including the Princess Suite, the Governor’s Suite, and the Royal Prince Suite, each exuding charm and spaciousness. Other accommodations like Deluxe Rooms, Club Rooms, Dormers, Junior Suites, and Studio Suites feature wooden ceilings and original eighteenth-century tile panels.
Culinary delights are a highlight at Palácio do Governador, with the nfora restaurant offering signature cuisine in an elegant setting, complete with indoor and terrace seating, as well as a private dining room. We sampled the delicious ravioli with funghi along with a steak and the house wine.
The contemporary spa, linked to ancient Mediterranean spa traditions, covers 1,200 square meters and features original Roman walls. It includes a heated indoor swimming pool with dynamic jets and chromotherapy, a sauna, a Turkish bath, massage and treatment rooms, and a gym, offering a sanctuary of relaxation.
We explored the historic Belém district, visited the iconic Belém Tower, and marveled at the intricate architecture of the Jerónimos Monastery. Lisbon’s vibrant streets, delicious pastries, and rich history were the perfect end to our European adventure. We also visited CaisCais, Sinta, and Porto.
We used Blacklane for our travel needs. Their high-quality, English-speaking chauffeurs made navigating unfamiliar cities a breeze. Our drivers were always professional, and punctual, and provided little touches of comfort, like Evian water and phone chargers, that made all the difference.
My top outfit pick of the trip was a versatile dress from sustainable designer, Diana Stelin. The comfort and style of the dress made it perfect for travel, and it looked great in photos. This attention to detail helped me feel confident and at ease throughout our trip.
Taking a two-week vacation from my 2-year-old son was not an easy decision, but it was a necessary one. The experiences I had, the hidden gems I discovered, and the memories I made were invaluable. By the end of our trip, I felt rejuvenated and ready to return to my role as a mom with a fresh perspective and renewed energy. I returned right on time to organize and celebrate his fabulous Cocomelon-themed second birthday. When my parents joined us in Lisbon, it was a beautiful reminder that it’s okay to take time for yourself, to explore, and to come back stronger for those who depend on you. Whether you are a new mom or an empty-nester, every parent needs a break from being a mom or dad, and there is no better way to travel than by choosing the top picks from a fellow well-traveled parent.
