We had the good fortune of connecting with Alex Palumbo and we’ve shared our conversation below.
Hi Alex, we’d love to hear more about how you thought about starting your own business?
My business is more than just a company — it’s a legacy that my father started over 20 years ago in Italy. When we brought it to Miami, we were the first to introduce and sell piadina here. We’ve stayed true to our roots by making everything from scratch, just like we did back home. For me, it wasn’t just about starting a business — it was about continuing a family tradition and sharing a piece of Italian culture with a new community. That’s why our company statement is: Italian Traditions Made in Miami. It reflects both where we come from and where we’re going.


Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Our business started in one of the most uncertain times — during COVID — with nothing but a food truck, a dream, and a deep love for our Italian roots. We launched with almost no money, building everything ourselves from scratch, just like we do with our food. From day one, we stayed committed to our mission: bringing real, authentic piadina — made the traditional way — to the people of Miami.
One of the biggest challenges we faced early on was finding the right location. We had our sights set on the Design District, and it felt like the perfect fit. But as a small, unknown business, we lost our spot to someone bigger. That setback was tough — it took a full year of struggle, doubt, and hustling just to stay afloat. But we never gave up.
Eventually, we found our true home at The Doral Yard, and that changed everything. The community welcomed us with open arms, and we finally had a space to grow and share our story the way it was meant to be told.
What sets us apart is our authenticity. We’re not just serving food — we’re preserving a piece of our culture. Every piadina is handcrafted, every ingredient carefully chosen, every bite tells a story that started over 20 years ago in Italy with my father. We’re proud to be the first to bring piadina to Miami, and even prouder that we’ve done it without compromising our values.
If there’s one thing I’ve learned, it’s this: resilience is everything. Building a business is never easy, especially when you’re doing it with limited resources, but passion, tradition, and community can carry you through the hardest times.
What I want the world to know is that this isn’t just a food business — it’s a legacy. It’s Italian traditions made in Miami, and we’re just getting started.


Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
So we meet up late afternoon, nothing crazy, just good energy. First stop? The Doral Yard — kind of the perfect spot to ease into the weekend without any pressure. Right away, we head over to Piadina 305, tucked inside the Yard. It smells amazing. We grab one of their classic piadinas — maybe the prosciutto and burrata or the truffle mortadella — soft, warm, melty perfection.
We sit outside, sun’s out but not too hot, music playing in the background, just catching up and laughing over lunch. Feels good to slow down.
After we eat, we take a short walk through Downtown Doral — not to do much, just to move around and take in the vibe. There’s a little park nearby where we hang for a bit with iced coffees. It’s one of those spots where time doesn’t matter.
As the sun starts to dip, we wander back to The Yard, but now the place is waking up. Lights are on, music’s louder, the bar’s open, and people are starting to gather. We grab drinks — maybe a mojito or something fruity — and just go with the flow. Maybe we split something from another vendor or grab dessert if something smells too good to ignore.
By now, there’s live music. Could be a band or a DJ — either way, the vibe is easy. No big plans, just good company, good food, and the feeling that it’s the start of a great weekend.


Who else deserves some credit and recognition?
Without a doubt, I want to dedicate my shoutout to my father, Bruno Palumbo. He’s the heart and soul behind everything I do. He started this journey over 20 years ago in Italy, building a business from the ground up with passion, dedication, and a deep love for our traditions. He was the first to believe in the dream of bringing authentic piadina to Miami, and his work ethic and values laid the foundation for what our business is today.
His guidance and example taught me what it means to lead with integrity, stay true to your roots, and never cut corners — especially when it comes to food. Everything we do, from making our products from scratch to the way we connect with our customers, is inspired by him.
