Meet Yann Couvreur | Pastry Chef and Entrepreneur


We had the good fortune of connecting with Yann Couvreur and we’ve shared our conversation below.

Alright, so let’s move onto what keeps you busy professionally?
One of the things I’m most proud of is having been able to bring our brand to life beyond France — to see it grow and resonate with people around the world is a true honor.
That said, it hasn’t always been easy. We’ve had our doubts — we still do sometimes. But looking back at how far we’ve come fills me with gratitude. What truly helped us move forward was never being alone. Having strong partners by my side gave me the strength to push through challenges and constantly reinvent myself.
Expanding to places like Miami has been a real learning experience. People don’t necessarily have the same tastes or expectations, and we had to adapt to a new market without compromising who we are.
Our brand is deeply rooted in nature — we work with the seasons, and let each ingredient speak for itself. The pastry is its own decoration; we don’t use artificial coloring or over-the-top embellishments, even in markets like the U.S. where that’s often expected.
What we offer is sincerity, simplicity, and a real respect for the product — and I think that’s what sets us apart.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If my best friend were visiting Miami for a week, I’d want to show them everything I love about this city — the places that feel both authentic and full of life.
I’d start with lunch at Boater’s Grill in Key Biscayne — it’s one of my favorite spots. I love seafood, and the vibe there is super relaxed, right by the water with a bit of a Caribbean spirit. It’s the kind of place where you can truly disconnect.
Then we’d spend an afternoon at the beach in Crandon Park, also in Key Biscayne. It’s calm, beautiful, and feels a little off the beaten path — just perfect.
For dinner, one of my all-time favorite restaurants in Miami is Mandolin, near the Design District. The food is incredible, and the atmosphere has that effortless charm that makes you want to stay for hours.
Of course, no visit would be complete without a stop in Wynwood. I love the Wynwood Walls, but even more than that, I love the neighborhood’s raw, artistic energy. There’s something very real and expressive about it — it reminds me of the creative spaces I’ve always felt drawn to. It’s exactly why I chose to open my first café there. It felt like the right place to bring our vision to life.
Miami has so many sides, but what I love most is how it brings together cultures, flavors, and people in such a vibrant and spontaneous way.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I’d like to dedicate this shoutout to my two partners, Benjamin and Jordan — we’ve been building this journey together from the very beginning.
