We had the good fortune of connecting with Alejandro Franco and we’ve shared our conversation below.

Hi Alejandro, what is the most important factor behind your success?
Being consistent, no matter what consistency beats anything.

What should our readers know about your business?
I do private Sushi Omakase dinners at my guest house in Chicago, New York and Miami. The most exiting thing is being discovering how my guest like their sushi, the tempeture, the flavor, the aromas and textures, is very unique. I got where I’m today by missing that connection with people, I didn’t wanted to go back to a restaurant so, I created my own interpretation of Sushi Experience. I overcome the challenges by never quitting. The biggest lesson is that you can build your own way, is possible!. I want the world to know about my own interpretation and appreciation of Sushi and the Japanese culture and how a humble immigrant can have his own bussines, being on tv, and make sushi at home of Famous people in United States.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If you’re Visiting Chicago, Definitely you have to try Next, which is a Alinea Group Restaurant, also Lyra, Sushi Dokku for Sushi and a beautiful speakeasy bar called Sparrow. And I would take my guest to experience Chicago from Michigan lake on a boat with a charcuterie, and good wine.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
To my mentor and Symbolic Father Hiroyuki Takeuchi
