We had the good fortune of connecting with Carlos Solano and we’ve shared our conversation below.

Hi Carlos, can you walk us through the thought-process of starting your business?
It all started when my mother arrived at my vacation home on December 31, 2024, and since I had known her kitchen for years, since she does not live with me, I told her mommy let me make this lasagna, you just guide me in the process, so I started making it, and after finishing everything and serving it at the end of the 31st and New Year’s dinner, everyone liked it, and I said to myself why not make it to sell it and that’s how “LA ITALIANA” was born with my wife.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I actually come from a country called Colombia. In that country I finished my architecture studies, when I arrived here it was more difficult for me to validate my career because of my English and so I started working in a restaurant, making it clear that I had never cooked in my life, in that restaurant I stayed approximately 5 years where I learned everything about the food field and just by watching the chefs I learned a lot and that love for cooking was born in me. Now I make all kinds of meals and according to my diners everything turns out very delicious. Now I dedicate myself to the habit of construction and in my free days I cook. I dream of one day being able to open my own food restaurant.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would usually take him to a boardwalk near the river, to walk and watch sunsets. I really like the fresh breeze, any outdoor activity, and of course to eat a good oven-baked pizza.

Who else deserves some credit and recognition?
The truth is, for this whole story and recipe, I must thank my grandmother for teaching it to my mother, and I must thank my mother for wanting to learn it.
