We had the good fortune of connecting with Michelle Ruiz and we’ve shared our conversation below.

Hi Michelle, what do you think makes you most happy? Why?
What makes me happy is being able to give people control over situations they normally would have control over. My company, for example, lies at the intersection of food, health, and climate change. Normally people don’t have control over the food that is available to them, how it impacts their body, and what emissions it has as it’s produced. I think consumers should be part of that decision making. I love knowing that my company, which produces healthy flour products from upcycled byproducts from food manufacturing, gives people a choice to simultaneously protect their bodies and lower emissions with their dollars.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Hyfé Foods is a biotech company that produces low-carb, protein rich fungi flour products by leveraging fermentation to upcycle water byproducts from food manufacturing. We want to redefine what it means to eat food by allowing people to (1) eat the foods they love, without the risk of chronic disease and (2) reduce their carbon footprint with easy and tasty alternative proteins.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I think south beach at sunset is a beautiful place to relax and enjoy the beauty of nature.

Who else deserves some credit and recognition?
I want to give a huge shout-out to my sisters Nichole and Cristi Ruiz. Nichole is a climate activist and Cristi is a climate economist. Both of them encouraged me to use the skills I developed in the oil & gas industry to develop technologies that help fight climate change. Thanks for helping me get to the “good side”.
