Meet Polina Filatova | Baker

We had the good fortune of connecting with Polina Filatova and we’ve shared our conversation below.
Hi Polina, we’d love to hear more about how you thought about starting your own business?
Since I was a child, I had an affinity for baking and desserts. I wanted to make something that people enjoy no matter the occasion and that is how Sweet Blossom Desserts started. My thought process has been focused on making sure every product is a quality one in terms of taste, texture, shape, and aesthetic. I want my products to bring joy to everyone who eats them – that is why I choose the finest ingredients for my recipes. With my passion for baking and desserts, I create unique flavors to bring smiles to people’s faces!

Let’s talk shop? Tell us more about your career, what can you share with our community?
Starting in the baking industry was a challenge, but I was determined to make it. I learnt through experience and by adapting to every situation. I’ve realized that it’s important to never give up in the face of adversity and always think outside the box for solutions. My brand is about creating unique desserts with an exceptional taste, texture, and presentation. I want others to know that your dreams are achievable no matter how difficult they may seem. Embrace all the challenges you face and you can achieve anything!
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If I had to plan a week-long trip for my visiting best friend, I would definitely take them to some of Miami’s most iconic places! For food, we would check out iconic eateries like Joe’s Stone Crab, Pura Vida and El Palacio de Los Jugos. For drinks, we would head to rooftop bars like No. 3 Social or Sugar for some amazing views and cocktails. When it comes to nightlife, there’s no shortage of options – from Legendary ClubSpace & The Hangar party scene, to bars like Ball & Chain and cabarets like Bar Nancy. During the day, I would plan a shopping trip along Lincoln Road or cruise around Biscayne Bay on a yacht – then top it off with some exciting outdoor activities such as paddleboarding and jet skiing!

Who else deserves some credit and recognition?
Absolutely! I would like to give a special shoutout to Rose Levy Beranbaum, author of The Cake Bible and The Pie and Pastry Bible, for inspiring me on my baking journey. As well as Karen Page and Andrew Dornenburg, authors of The Flavor Bible, who have opened up the possibilities of flavor combinations for me. Their books have truly helped me become better baker, and I can’t thank them enough! Finally, I would like to thank all the bakers and dessert-makers out there who keep pushing the boundaries of taste and texture.
