We had the good fortune of connecting with Rafael Ramsa and we’ve shared our conversation below.
Hi Rafael, can you walk us through the thought-process of starting your business?
When I was a child, ice cream was my favorite food. I don’t think I ever forged a deeper bond with anything else I ate. Even now, if I close my eyes and summon the memory of the ice cream parlor where my parents used to take me, I can still see the white mosaic tiles, the menu listing its flavors, breathe in the peculiar scent that lingered in the air, and recall with precision the place where the Neapolitan rested in the freezer to the right, and the chocochip in the one to the left—the two flavors I never failed to choose.
But we grow, and our tastes grow with us. The palate matures, welcoming the bitter edge of beer or the piercing sharpness of blue cheese. For years—decades, perhaps—I drifted away from ice cream. The pull of gummy bear or cotton candy scoops no longer reached me. Yet a whiskey ice cream, or one infused with tequila, could still stir my curiosity.
That is the insight behind Aubi & Ramsa: to bring those over 21 back into the delightful realm of ice cream, now reimagined for the adult palate, enriched with the complex, luscious flavors of the world of spirits.

What should our readers know about your business?
We are the world’s first ice cream brand with alcohol. This doesn’t mean that ice cream with liquor hadn’t been made before us—indeed, the pairing of ice cream and spirits is as old as ice cream itself. What had never been created, however, was a brand devoted exclusively to ice cream with liquor, crafted solely for adults, and carrying the sober, refined character that defines Aubi & Ramsa.
If you are going to create flavors using the finest wines and spirits in the world, you must rise to their level. That is why we built our brand with the same standards of quality, design, and innovation that you find in the greatest single malt whiskies, bourbons, tequilas, champagnes, and wines.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Miami is a city rich in every sense of the word. If you visit, of course, you have to go to the beach—we have many, and they’re among the best. Miami Beach is iconic, which makes it an absolute must. Beyond the sand and ocean, it’s also home to the largest concentration of Art Deco buildings in the country, which gives it a very special charm.
Since my friend enjoys golf, I would take him to play at one of the many courses we have; Florida is full of great golf courses. The Cuban influence in Miami is immense, so visiting Calle Ocho is always a good plan—having a meal at a Cuban restaurant and stopping by one of the bars there to enjoy a proper mojito.
And then there’s the Design District, where you’ll find luxury designer boutiques and, just as importantly, the shop where our story began: the very first ice cream shop with alcohol, made exclusively for adults.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Our ice cream recipe is unique, and much of our success is owed to it. The recipe was created by Suzanne—my wife—who oversees our production facility and is the mind behind the development of the many flavors we craft for our shops, as well as for the collaborations we undertake with different spirits brands.
