We had the good fortune of connecting with Ricardo Quiroz and we’ve shared our conversation below.
Hi Ricardo, we’d love to hear more about how you thought about starting your own business?
First of all it was my need to reinvent myself. Before I have my business I felt the desire to start something on my own. I worked for a company who has many restaurants in México, but I didn’t feel complete. The actual Pandemic arrived and all that restaurants had to close, so I lost my job and my world came down.
At that moment I thought on create my own future and I spent my time improving my skills. Therefore I started my MBA on business, reading more about my Mexican culture and in some point that lead to the mexican bakery path.
The nostalgic of my childhood was the motive to recreate the traditional bread that we eat in my country and now I have my own Mexican and artisan bakery: OH.MYCONCHA.
What should our readers know about your business?
Oh.MyConcha, Mexican Artisan Bakery
My business was born exactly one year ago and never imagined that someday I would have it. It’s begun like an experiment because I’m not chef but always feel this approach with the food, actually for 15 years my work was around restaurants.
During this Pandemic I’m learned how do bakery, especially Mexican bread because here in Miami I couldn’t find the authentic traditional flavor, like we can eat it in México, so I put hands over the dough. After practice and practice, a lot of proofs and fails I found the perfect consistence and flavor.
My first product was the Concha, this is like the french brioche but on the top has a layer made with powered sugar mix with vanilla or cacao (the traditional way) and I decided explore with more flavors and colors, for that reason I create a second line, The No Tradicional Conchas like Concha Brunch, made with sparkling wine and sprinkled with dehydrated bacon; Concha with Mazapán, a typical candy made with powered peanuts and sugar. In total we have more than 11 flavors.
Then, I introduce more types of bread, like Pan de Muerto (we eat this only on for Día de Muertos in October but I made this all the year), Rosca de Reyes and our first salty bread: El Birote. The principal mission is bake only traditional Mexican bread, this is the way to bring our culture wherever we go.
It’s was not easy realized all this but the constancy, a mind clear, the love for do this and give to the people good moments when they eat our products, these are the reasons to non stop and continue to follow this dream and go for it. If you believe it you can create it.
Oh.MyConcha had given to me a lot of lessons because I discover new talents every day, like be a baker, the capability to create something good with your hands, listen to the people. But the most importan is recognize that I can do everything.
Now, I work only by pre order and bake in house, but in a nearly future I loved to open my own café.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
First, I want to thanks to my husband Sergio, without him and his eternal support I’m sure I couldn’t have achieved all this. To my parents for give me the confidence and listened every crazy idea. Thanks to my friends, my second family, for being the profesional tasters, specially to Jessica and Andrés for being my teachers and show me the baker inner on me.
Thank you all.
