Teresa, we are so thrilled to be connecting again and can’t wait to hear about all the amazing things you have been up to. Before we jump into all of that, some of our readers might have missed our prior interview, so can you take a moment to reintroduce yourself?
Teresa Rodríguez is a Registered Dietitian Nutritionist (RDN) with over 32 years of experience, specializing in functional and integrative nutrition, ketogenic diets, and the management of metabolic and renal diseases. She holds the distinction of being the first Puerto Rican to pass the Advanced Level Practice Board, the highest-level certification for dietitians in the United States. Throughout her career, Teresa has been recognized as an educator, researcher, and international speaker, offering innovative solutions to reverse metabolic conditions and improve her patients’ quality of life.

Alright, so our main goal today is to give our audience an update on what you have been up to since our last conversation. We’d love to hear how things are going and what you are most looking forward to or excited about these days.
Since our last conversation, my journey has been filled with growth, discoveries, and a deeper commitment to transforming lives through functional and integrative nutrition. Over the past decade, I have dedicated myself to educating health professionals, families, and patients around the world—especially in Latin America—on how to reverse metabolic conditions and put them into remission through Low-Carb and Ketogenic Nutrition.
One of the biggest advances in my work has been the integration of personalized nutrition using nutrigenomics, allowing me to tailor interventions based on genetic predispositions. This has led to groundbreaking progress in reversing conditions such as epilepsy, diabetes, kidney disease (including polycystic kidney disease), cancer, Alzheimer’s, and even mental health disorders like bipolar disorder. Seeing these transformations firsthand in my patients has reinforced my belief that remission is possible—and I have proven that through science-based, holistic interventions.
Beyond nutrition, I have delved into the power of phytoextracts and polyphenols to activate the microbiome and restore body-mind balance. I now use plant-based solutions as the foundation of my practice, leveraging the healing properties of nature to complement metabolic therapies.
Another exciting development in my work is the integration of natural therapies, which I have incorporated into my retreats in the mountains. These immersive experiences allow participants to activate their parasympathetic nervous system and achieve deep states of relaxation and healing through:

My mission as a functional and integrative dietitian is to empower individuals with the knowledge and tools to optimize their health naturally. Through my research, patient care, and immersive retreats, I am more committed than ever to helping people achieve long-lasting health transformations.

What are you most excited about in the coming year?
What excites me the most about this coming year is the opportunity to continue my professional journey, helping people around the world feel vibrant and full of life—just like they’re 15 again!
This year, I have 13 local and international conferences where I will be educating healthcare professionals and patients on how to heal, reverse, and prevent metabolic disorders using the most natural approaches. The need for proper nutrition education has never been greater, and I am committed to spreading this knowledge to empower more people to take control of their health.
