Meet Matias Gorban | Founder of Bobe Kitchen & Bakery | Hospitality & Food Brand Entrepreneur


We had the good fortune of connecting with Matias Gorban and we’ve shared our conversation below.
Hi Matias, what is the most important factor behind your success?
I think the most important factor is clarity.
In hospitality, especially in a city like Miami, there are many beautiful places, big investments, and strong restaurant groups. For a brand to stand out, it needs to know exactly what it is and why it exists.
With Bobe Kitchen & Bakery, we were very clear from the beginning that we didn’t want to create just another bakery café or coffee shop in Downtown Miami. We wanted to create a place that felt like home warm, emotional, familiar, and built around real food, coffee, pastries, breakfast, brunch, and hospitality.
That clarity helps every decision: the design, the menu, the service, the music, the way we talk to customers, and even the way we grow.
For me, a successful brand is not only the one people visit once. It is the one people remember, recommend, and make part of their routine.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Bobe Kitchen & Bakery is a Mediterranean / Israeli-inspired bakery café in Downtown Miami. We serve coffee, fresh pastries, breakfast, brunch and lunch, but the idea behind Bobe is bigger than the menu.
When I moved to Miami, I realized I didn’t want to build just another coffee shop or another restaurant. Miami already has amazing places, strong hospitality groups and very polished concepts. What I felt was missing was something more personal: a place that made people feel close to home.
That is how Bobe was born. “Bobe” means grandmother in Yiddish, and the concept is inspired by the food, warmth and memories connected to our grandmothers. We wanted to create a bakery café in Downtown Miami that feels familiar, emotional and real.
It was not easy. I came from Argentina, where I knew the market and had strong relationships. In Miami, I had to start almost from zero, in a very competitive city. That forced me to be clearer about the brand, the food, the service and the experience.
What I’m most proud of is that people don’t only come to Bobe for coffee or pastries. They come because they feel comfortable here. They bring friends, have breakfast meetings, stop by for lunch, or make it part of their daily routine. For me, that is the real success of the brand.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If a friend was visiting Miami, I would start the day at Bobe Kitchen & Bakery for coffee and breakfast in Downtown Miami. Of course I’m biased, but I really believe it’s the kind of place that gives you a warm and personal start to the day.
For lunch, I would take them to Tatore. It has great food, a strong identity, and a beautiful energy. For dinner, I would choose Amazonia Nikkei, which is a restaurant very close to me and a great place to experience Nikkei cuisine in Miami.
Outside of restaurants, I really enjoy Coconut Grove. It has a different rhythm from the rest of the city more relaxed, green, walkable, and with a lot of character. I think a perfect Miami day combines good coffee, good food, being near the water, and spending time in neighborhoods that feel authentic.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I would dedicate my shoutout first to my wife and my family. Moving to Miami and starting over in a new country was not easy, and having their support has been everything for me.
I also want to recognize the people who have worked with me along the way, partners, team members, chefs, baristas, managers, and everyone who helped bring these ideas to life. No business is built by one person alone.
Bobe Kitchen & Bakery exists because of many people who believed in the concept, worked hard, and helped create a place that feels warm, familiar, and real.
