We had the good fortune of connecting with Brett Chiavari and we’ve shared our conversation below.

Hi Brett, what was your thought process behind starting your own business?
The thought process behind starting BC Tacos was pretty simple and really two things. First was, the love of tacos of course. Can’t do something every day if you’re not passionate about it and love it. Second, the desire to not work for anyone else. Being able to work my butt off for no one but myself is pretty empowering.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Being one of the longest tenured food trucks, at 15 years, I have built up my reputation. Quality food, great service and someone you can absolutely count on. That has helped my name get passed around and the word of mouth advertising to spread.
Dealing with a food truck, it’s never easy. Dealing with a kitchen and finicky equipment plus an automobile that sometimes has a mind of its own is always the most challenging.
At my peak of having two trucks and two restaurants there are so many variables, but having the right people in place was always helpful to me. I always had a great core of managers that I trusted and relied on to share and execute my vision.
At this point in my career and my tenure in food trucks, I would like to be known as one of the original, consistent, delicious trucks there was in South Florida. Me and the brand kind of mold together at this point. It’s all me. I handle the phone calls, the emails, the prep, the cooking, I’m the one driving and serving you. After 15 years, I still have a passion for the business.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would have to show them a good mix of Broward and Miami. And how any trip with me, or visiting me, goes, the trip revolves around food. I do have a big sweet tooth, so dessert spots were hitting are:
Parlor Donuts in Ft Lauderdale
Salty Donut in Wynwood
Cookie Head in Ft Lauderdale (depending on their monthly specials)
Wilton Creamery will always be the best ice cream place ever (RIP) so I will definitely tell them about it, just because. But let’s not sleep on Publix’s new limited edition flavors of ice cream (maple chocolate chip pancake!!!!)

I’m lover of all things pizza, tacos and sandwiches, which means
Velvet Taco (my favorite taco spot) is getting hit up
How ya Doughn (favorite pizza spot) in Boca or Coral Springs
Generossos in Parkland, Italian deli sandwiches are phenomenal.
Chuckies Steak and Hoagies for cheesesteaks
Since well spend a day in Miami getting Salty Donut, we’ll go to the Brightline food hall and get Peppis cheesesteaks and Corner Diner (formally Josh’s deli)
Maybe dinner at Mother Wolf for their amazing pastas.
With three kids, all my friends have kids, so that’s what our time revolves around.
Lots of splash pads, like Welleby Park in Sunrise is our favorite.
A day at the beach would be fun
Museum of Discovery and Science is always on the agenda, Flamingo Gardens as well.
If we get some adult time in, I would see who was at any of South Florida Improvs, we love some stand up. Would also check the concert venues around town. My wife, seven year old and I love some concerts and live music.
I know how to pack a vacation, but can also add some relaxing days in there too!

Who else deserves some credit and recognition?
I wouldn’t be where I am today without my family and friends who supported me. Both my parents are professionally trained chefs, who owned a catering company when I was born. I practically grew up in the back of a kitchen. My dad has been on this journey with me helping, guiding, mentoring the last 15 years. My parents have always been super supportive even when I had this crazy idea to open BC Tacos. My sister who left her career in teaching to come work for me full time. You have to have a good relationship to be able to work with your sibling every day. My wife who came in in the middle of my business owner chaos and embraced it. Not only embraces it, encourages me, supports me and always pushes me to do what I have to do. My three kids of course. Nothing like honest feedback from a 15 year old, 7 year old and, thankfully, the 18 month old can’t critique just yet. The fact that my 7 year old Stella, loves tacos, the truck, almost as much as I do, always pushes me to be the best version of myself.
All my friends and additional family who use me for catering, book me for events, pass along my information, share posts, were some of my original encouragers, taste testers…there’s too many names to name but I wouldn’t be where I am today without them, that’s for sure!
