Meet Max Kamakura | Executive Sushi Chef of Mr. Hospitality Miami

We had the good fortune of connecting with Max Kamakura and we’ve shared our conversation below.
Hi Max, what is the most important factor behind your success?
The key to success, for me and for Queen Omakase, lies in being unique, original, and creative. These values, combined with unwavering consistency, have been critical. Over the past year, we’ve focused on constant improvement and development, ensuring we continue to deliver exceptional experiences.

Alright, so let’s move onto what keeps you busy professionally?
I’ve always been drawn to what’s unique and visually captivating—elements that stand apart from the ordinary. This innate curiosity and passion for creativity have shaped my journey as a chef, allowing me to craft experiences that go beyond the plate and leave a lasting impression on my guests. What truly sets me apart is my ability to balance the rich heritage of tradition with a forward-thinking, innovative approach to gastronomy.
Coming from a family of three generations of sushi chefs, I was fortunate to grow up immersed in the art and discipline of culinary tradition. My early training was rooted in the meticulous, time-honored techniques passed down through my family. This strong foundation gave me the tools to honor, adapt, and evolve those traditions in a way that reflects my personal style and the ever-changing world around me. I’ve always believed that innovation and tradition can coexist harmoniously, and that philosophy drives everything I do.
Getting to where I am today professionally has been far from easy—it’s required resilience, and a willingness to embrace challenges head-on. The culinary world is as demanding as it is rewarding, and I’ve encountered my fair share of obstacles. One of the most significant lessons I’ve learned is the importance of stepping outside my comfort zone. Risk-taking has been pivotal in my journey, and I firmly believe that every bold decision I’ve made—no matter how daunting—has shaped the life and career I’m living today.
Along the way, creating healthy habits has been fundamental to my success. For me, it comes down to three simple but powerful principles: daily workouts to keep my body and mind energized, eating well to fuel myself with the nutrients I need, and prioritizing fun to maintain balance and joy in my life. These habits not only keep me focused and motivated but also help me approach challenges with a clear mind and a positive attitude. One quote that has guided me through these challenges is, “What history says and human beings repeat for many generations.” This reflection reminds me to remain grounded in the traditions that are the essence of my craft while continuing to push boundaries and create something fresh and exciting.
Miami has been such an incredible source of inspiration for me. The city’s diversity and vibrant energy are unmatched, bringing together cultures from all over the world in a way that feels alive and electric. I connect deeply with that dynamic vibe, and it pushes me to keep innovating and creating.
One of the projects I’m most proud of is the Omakase Cooking Class. This intimate experience allows me to share my craft, teach others about the art of sushi, and help people recreate the magic of Omakase dining in their own homes. There’s something deeply fulfilling about connecting with people in such a personal way and inspiring them to engage with food as an art form. It’s a joy to see guests leave not only with new skills but also a deeper appreciation for the tradition and creativity that goes into sushi-making. Watching the excitement and curiosity spark in others reminds me of why I love what I do. In the future, I hope to evolve this experience into a more professional class, designed for those looking to take their first steps into the industry and build a foundation in sushi-making as a career path.
I find my inspiration in the energy of nature and the world around me, striving to connect with what surrounds me in the present moment while reflecting on the experiences and opportunities life has placed in front of me during my journey of innovation. When new ideas come to me, I trust my intuition, embracing the signs and challenges that guide me along the way. If there’s one thing I want people to take away from my work, it’s that everything I do is rooted in passion and a drive to honor the past while imagining what’s possible for the future. Through every dish, every experience, and every risk I take, I want to show others that creativity and innovation can thrive alongside tradition. My story is about connection, growth, and finding joy in the process, and I hope it inspires others to embrace their own journey with the same energy and purpose.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Mornings
I love starting my mornings at the beach, taking in the beauty of Miami. Activities like longboarding along the shoreline or jet skiing by the Bayside offer unique ways to experience the city from a fresh perspective. For a more relaxing start, yoga in one of the parks near South Pointe is always a peaceful option.
Brunch/Breakfast
For breakfast, nothing beats the açaí bowls from “Under the Mango Tree” on Fifth Street in South Beach—they’re truly some of the best. If you’re in the mood for something different, the Farmers Market in Coral Gables is a great spot to explore local flavors, or you can enjoy a Mediterranean-inspired brunch at Abbalé Teñavivian Kitchen in South Beach.
Afternoon
Miami’s museum scene is vibrant and fun, offering something for everyone. Spend the afternoon exploring cultural gems like the Frost Science Museum, the historic Vizcaya Museum and Gardens, or the Pérez Art Museum (PAMM). For a more eclectic vibe, the art galleries and street art in Wynwood are always inspiring.
Snacks/Lunch
For lunch, Calle Ocho is a must-visit. Sanguich de Miami serves one of the best Cuban sandwiches, paired perfectly with a strong cortadito from a “ventanita” (a traditional Cuban coffee window). In the Design District, you’ll find exciting new spots like the Hand Roll Bar at Naminori or the sushi at Yasu San in the food court. Upper Buena Vista is also a lovely area to spend a lazy afternoon, with charming spots like El Turco and Colombian ice cream served from a beautiful food truck.
Happy Hour
When it comes to happy hour, Vise Versa is a personal favorite for its excellent drinks and crudos—don’t miss their incredible Monday burger special! For more amazing burgers, try Burgers & Shakes in North Miami Beach or Cowy Burger in Wynwood for an unforgettable smash burger. For barbecue lovers, Hometown Barbecue in Allapattah is a must.
Evening Activities
Catch a Miami Heat game at the Kaseya Center to cap off an exciting day.
Late-Night Drinks and Music
When the night rolls in, Miami’s speakeasies are the perfect way to wind down with great vinyl music and crafted cocktails. Some of my favorites include Miami Sound Bar, Dante’s HiFi, Mama Tried, and other hidden gems popping up around the city.

Who else deserves some credit and recognition?
I’d like to dedicate my shoutout to my assistant and dear friend, Santos Morales. He’s been by my side for the past 10 years, a truly dedicated and loyal partner who has supported me through every step of my career.
