We had the good fortune of connecting with Juan Prieto and we’ve shared our conversation below.

Hi Juan, is there something that you feel is most responsible for your success?
For my career I always found that never letting myself be comfortable has allowed me to be successful and stay driven. Always putting myself in a position to feel a certain level pressure has been a key factor in continuing to grow in my career. I’ve personally always excelled under pressure, and allowing that to be part of my growth, be it professionally or personally, has been to single most important factor in my success as a Chef.

Alright, so let’s move onto what keeps you busy professionally?
Personally I feel that what sets me apart from others in my position in the culinary industry is the fact that we build strong bonds amongst the team. I genuinely care about the success of each individual and how they help the team succeed. We keep open communication with each other even under duress. It definitely was not easy, I feel many of the lessons I’ve learned were of what not to do and how not to treat people you rely on for success. I want the world to know that if you focus on a goal and dream, do things with good intentions and what you work towards will come in do time. Have patience and be persistent. Our brand, Chachos Island Shack, is a reflection of the good vibes you’ll find amongst the Caribbean people. Good energy good times and even better food. Simple be executed to exceed expectations.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
The great thing about south Florida is the diversity of people. For food during the week we would mix it up. We’ll definitely start off with some south Florida staples such as Cuban coffee and sandwiches in little Havana. We’ll find some griot in little Haiti, some Jamaican food in Miami Gardens and for diner we can head to South Beach or Ft. Lauderdale for some upscale dining. We’ll finish the weekend in wynwood bar hoping and eating from all the food trucks and local spots we can find. Along the journey has to be getting in to a Miami Heat basketball which are always great times. Did I mention nightlife ? If the y want to party South Florida is able to accommodate that for 24 hours a day if they can handle it.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
First and foremost my wife and family. They are the driving force that keeps me going. Also my brothers/sisters in the kitchens I’ve worked in, that have helped mold me and guide me through this culinary journey. My grandmother deserves credit in setting an example of hard work and service to others, which are paramount in the culinary industry.
