We had the good fortune of connecting with Youry Ordaz and we’ve shared our conversation below.

Hi youry, what was your thought process behind starting your own business?
In 2021, after years as a bar manager, I decided to open my own restaurant. The timing was risky — the pandemic had devastated many businesses — but I noticed customers returning and felt there was an opportunity to create something people wanted. I started small with a pilot menu and community soft openings to get feedback. The hardest part was finding staff who believed in the project; many were cautious after the pandemic. To build trust I hired slowly, invested in hands-on training, and cultivated a team culture focused on ownership. That approach turned initial hires into long-term core staff.”

What should our readers know about your business?
What sets us apart is people-first hospitality and genuinely homemade food. Our mission is family — for guests, staff, and the neighborhoods we serve. We source and prepare everything in-house to keep flavors authentic and avoid additives. Scaling from one 45-seat spot to multiple locations, including a 190-seat award-winning restaurant in Miami Lakes (Best of Florida — Mexican Restaurant, 2025), tested our systems and leadership. The biggest win is social impact: we created roughly 60 jobs, support local initiatives, and strive to repay the community for its support. The lesson: consistency, culture, and treating people well are the true engines of sustainable growth.”

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
here’s a tight, week-long itinerary I’d give a best friend visiting the area. It mixes outdoors, culture, food, drinks, and nightlife.

Day 1 — Arrival / South Beach
 Check in, walk Ocean Drive and Lummus Park.
 Dinner at a beachfront spot to watch the sunset.
 Light nightcap and people-watching on Collins Ave.

Day 2 — Florida Keys fishing trip (Key Largo or Islamorada)
 Morning chartered fishing trip (reef or sport fishing).
 Late-afternoon sunset dinner at a Keys seafood restaurant.
 Relaxed evening back at the hotel.

Day 3 — Relaxed Keys → Return to Miami
 Leisurely brunch in the Keys, short beach time or snorkeling.
 Drive back to Miami, early evening rest.
 Casual neighborhood dinner.

Day 4 — Little Havana (my cultural hometown stop)
 Morning coffee and Cuban pastries on Calle Ocho.
 Visit Domino Park, cultural murals, and a cigar shop.
 Lunch with classic Cuban food.
 Evening salsa night — recommend Ball & Chain or a lively local spot.

Day 5 — Wynwood + Design District
 Morning Wynwood Walls and gallery stroll.
 Lunch at a Wynwood cafe.
 Afternoon shopping/browsing in the Design District.
 Night out at White Elephant Cocktail Bar for craft drinks and a special vibe (our latest project).

Day 6 — Everglades + Sunset Cruise
 Morning airboat tour in the Everglades (wildlife viewing).
 Return for a late-afternoon sunset cruise from Miami Beach or Biscayne Bay.
 Seafood dinner near the marina.

Day 7 — Neighborhood favorites & farewell
 Brunch at a local favorite.
 Leisurely walk through a neighborhood market or beach time.
 Final cocktail/dinner at one of my restaurants to showcase our hospitality and homemade flavors.

Extras / Recommendations
 Swap days depending on weather (Keys are best for calm seas).
 Bring sun protection and comfortable shoes.
 I’ll always include a meal at one of my places so friends experience the hospitality and flavors we pride ourselves on.

When we launched I remember countless nights working 18 hours straight and missing time with loved ones — my daughter was just eight months old. What kept me going was the team. My business partners matched my commitment and vision, Sergio stepped up as a hands-on supporter and now sits on our management team, and Chef Gustavo came in on his days off to get the kitchen running. That combination of trust, hard work, and love from them (and our staff) turned a risky idea into a real restaurant.
